C-85 "Stumbles" on Rapid Throttle Advance

I have a '46 J-3 with a C-85 (Stromberg NSA-S3A1, Eisemann mags) running MOGAS.

Engine runs smooth at idle and at all RPMs when tied down. The engine faithfully performs throughout entire RPM spectrum with slow/smoothly advanced throttle. Problem is when I rapidly advance the throttle from idle, simulating a go-around etc., the RPMs drop and the engine can only be sustained/cleared by bringing the throttle back to "match" the TACH. Only way to reach full-RPM is through smooth application of throttle--obviously an easy practice to adopt for takeoff and even waveoffs; but I still would like the option of a jam-accel if/when needed.

What am I missing?
